Chinese Ground Beef With Green Beans
This spicy ground beef and green beans is one of the most popular dishes in China, originated from Szechuan cuisine. It is also one of my favorite dishes.
First, I deep fried the green beans until crisp outside, then sautéed the garlic, ginger and dried chili pepper until fragrant.
After that, I stirred in the marinated ground beef and cook until the beef is no longer pink.
Finally, I added the green beans back to the pan, stirred and tossed in salt, sugar and soy sauce to season.

Spicy ground beef and green beans

Ingredients
- 1 pound green beans, ends trimmed, let dry
- ⅕ pound ground beef
- 2 dried chili peppers, cut into small pieces
- 1 tablespoon minced garlic
- ½ tablespoon minced ginger
- For marinating the beef:
- a touch of salt
- a touch of sugar
- a touch of oil
- 1 tablespoon soy sauce
- 1 tablespoon cooking wine
- For cooking and seasoning:
- ½ cup vegetable oil
- ¼ teaspoon salt
- ¼ teaspoon sugar
- 1 tablespoon soy sauce
Instructions
- Marinating the beef with salt, sugar, oil, soy sauce and cooking wine for about 10 minutes.
- Heat ½ cup of oil in the pan over medium heat, carefully add in the green beans, deep fry for about 8 minutes until their surfaces are crisp.
- Fish the green beans out and set aside, leave half of the oil in the pan and discard the other half.
- Turn to medium-high heat and stir in the dried chili peppers, garlic and ginger, sauté for about 2 minutes until fragrant and browned.
- Add the ground beef into the pan and stir fry for another 2 minutes until the beef has changed color.
- Stir in the green beans and toss in the salt, sugar and soy sauce, sitr fry for another 2-3 minutes and serve.
Notes
Make sure the green beans are dry before putting them into the hot oil for deep frying.

I made this subbing in a Beyond Burger and red pepper flakes for the beef and dried peppers. I also used Shao Xing cooking wine. It was really good and super easy to make. I will definitely make it again. Thanks for posting it!

Just 1/5 pound ground beef? That's like 3.2 ounces, not much with a pound of green beans. I'm going to try the recipe because it sounds really good, and I do "blistered" Szechuan beans frequently.
